Mimi is an accomplished triathlete, runner, and fitness instructor. She has completed three Ironman triathlons, several half Ironman triathlons, and five marathons, including a second place finish in the Salt Lake Marathon, a fourth place finish in the Deseret News Marathon, and a top twenty finish in Ironman St. George in her respective age group. She is a Stott® Pilates instructor, and she is certified in Dietmasters Nutrition. She teaches fitness classes at several local facilities, including spin, weight training, and core strength. Group fitness is her passion and she loves to motivate a group to work hard!
